Description

Dark mahogany in colour. Vibrant notes of maple syrup, brown sugar and raisins. On the palate it is smooth and rich, with a refreshing acidity. Drink chilled with blue cheeses and créme brulée. Also on the rocks with a slice of orange.

Serve slightly chilled with blue cheeses such as Stilton, Cabrales or Gorgonzola, or as dessert with pastries and creme brulée. Also nice "on the rocks" with a slice of orange.

Viticulture

10,000 vines per hectare, cordon trained and spur pruned. Integrated viticulture and pest management. Machine-harvested (Palomino) and hand-harvested (Pedro Ximénez) in August. Pedro Ximénez is sundried for a couple of weeks.

Vinification

Palomino juice is fermented and fortified up to 18%, then aged in old American oak casks. Fermentation of Pedro Ximénez juice is arrested by adding grape brandy, with a resultant alcohol level of arount 17%. Then aged in old American oak casks. Once both wines are aged, they are blended and subsequently bottled.

Aged in old American oak casks.
