Description
Light golden hues and a slight silver undertone illuminate this delicately effervescent wine. Aromas of pure lemon, mineral and honey tones and a hint of tangerine fill the nose. The palate has a lively, sweet lemon start offset by a crisp acidity and a very clean, pure structure.

Nyetimber now has 11 vinyards across three counties (West Sussex, Hampshire and Kent) and uses only its own grapes from its own vineyards, each of which was deliberately selected to be south-facing with either sandy or chalk soils and to be sheltered from the coastal winds. Prior to harvest, the grapes are tasted to ensure the best flavour development before picking. Every single grape is picked by hand at the optimal time, a decision that is made on a parcel by parcel basis. Nyetimber is committed to minimum intervention viticulture, and was one of the first producers to receive the Sustainable Wines of Great Britain (SWGB) certification.
Vinification
Each vineyard parcel is treated uniquely, from picking, to gentle pressing, to vinification (separately) in stainless steel tanks. Such attention to detail allows for an extremely judicious selection when blending decisions are made in the spring following the harvest. All wines are crafted according to the strict rules of the traditional method, aged for extended periods of time (minimum three years) and given sufficient post-disgorgement time before release.
