Description
A light gold colour with a fine persistant mousse. Clean, crisp pear and white peach aromoas are balanced by gentle honey notes. Chardonnay dominance brings finesse, along with crisp fruit freshness. The two Pinot’s add depth and character. A beautifully balanced finish. Will age gracefully over time as the Chardonnay matures. Drink now or age for the next two or three years.

Vineyards spread across the South East with a combination of chalk, clay and sandstone soils. Generally south facing sites, free draining slopes in and around the South Downs of England. Aprox 10 - 50 meters above sea level with a cool maritime climate.

Vines up to 25 years in age. Combination of Chardonnay, Pinot Noir and Pinot Meunier varietals. Vine density average 4000 per hectare. Double guyot pruning with vertical shoot positing training.
Vinification
Primary fermentation in stainless steel followed by full malolactic fermentation. Second fermentation in bottle

18 months in contact with lees prior to disgorgement
