Originally the grower wanted to extend his planting of Clairette Blanc used primarily for Brandy production but due to limitations at the time for access to new plantings of Clairette he was offered Fernao Pires. Planted in 1987 this block is now producing a crop of well balanced fruit.
Vinification
Minimal intervention, gentle pressing of the whole bunch, removal of green matter and held on skins for 12 hours.
Maturation
After fermentation the wine is racked from the gross lees and returned to the horizontal tank for maximum wine to fine lees contact. Monthly pump over until required style is reached.
