Description
Sourced from cool-climate, elevated sites and a close proximity to the sea, create an elegant wine in a classical style. This Chardonnay makes a bold statement with a heady combination of lemon and orange zest, fleshy yellow fruit, laced with hints of cinnamon and white spice. Well balanced and softly structured, with the lingering citrus flavours. The bold primary fruit, secondary lees and tertiary spice character of this wine makes it a layered and versatile food partner. The balance between growth and yields at 8-9t/ha are managed to ensure top quality grapes.
Vinification
Grapes were hand sorted and whole bunch pressed. Cold settled for two days. Thereafter the clear juice was racked and some of the pure fluffy solids were added to obtain a high-quality juice. Natural fermentation started in stainless steel tanks, 14*C, where after 70% of the must was then transferred into French oak barrels for the remainder of the fermentation with the remainder in stainless steel. The wine remained in barrels sur lie, with regular stirring of the lees for a further 10 months to enhance mouth-feel. After maturation the different components were blended together before bottling.
Maturation
After fermentation the wine remained on the lees with regular batonnage for a period of 10 months. 30% matured in stainless steel and 70% in oak barrels.
