Description

Aromas of honeysuckle and citrus with hints of nougat and roasted nuts. Delicate fruits and creaminess fill the mouth with a lingering finish of citrus and nougat. Great with fresh sea bass.

This Cuvee is made from wines grown on multiple sites in Tasmania, all idiosyncratic and ideal for producing excellent fruit for sparkling wine, resting on a bed of pure, red, free-draining basalt soils.

Vinification

Hand-picking, gentle whole bunch pressing, cool fermentation, 100% malolactic fermentation, complex assemblage and extended ageing on lees after bottle fermentation, all combine to produce a stylish and complex wine. To maximise blending options and complexity in the final wine, batches are kept separate during winemaking. Released with a minimum three months of bottle age.
