Description
Aiming for elegance, restraint and the ability to age, the acid is bright and there’s generosity of flavour. Typically it shows white flowers, citrus, and nectarine notes.
The 2020 vintage was very low yielding, which resulted in great concentration. The cool ripening conditions produced Chardonnay with intense flavours and excellent balance.

Viticulture
Growing the best possible grapes, managing vineyards sustainably, and valuing vine health, soil health, and low yields are central to the Shaw + Smith approach.
The healthy soil and vine philosophy currently employs the following: - No herbicides, synthetic fertilisers and fungicides - Organic compost-based fertilisers - Mowing and mechanical weed removal - Shoot and bunch thinning, and vertical shoot position canopies - Organic canopy sprays for disease control - High density planting (5000+ vines per hectare) - Diverse mid-row swards - All fruit hand picked - Native vegetation areas within vineyards
Vinification
The hand-picked grapes were chilled overnight, whole-bunch pressed, and then fermented in French oak barriques and puncheons, a third of which were new. Maturation then took place in oak with some lees stirring prior to bottling.
