Viticulture

The vineyard soils are made up of podsolics - old grey soil over yellow clay, which is sandy and slightly sodic. All the vines have been spur pruned and the vine age is varied. Vines are planted roughly 1.8m apart with 3.6m between the rows to allow machinery access. The Trellis system is generally a single wire cordon.

Vinification

This blend is made in a traditional style. Each variety was vinified separately, with no skin contact and cold settled. The fermentation took place under strictly controlled cool temperatures, then clarified. The final blend was bottled early to retain its freshness.

Maturation

After a short period on yeast lees, the parcels were blended, stabilised and filtered for bottling, thus showcasing fresh varietal flavours.
