Description

Organic, Vegan, and Biodynamic Chianti Classico DOCG. Handpicked 100% Sangiovese grapes from high-altitude vineyards in the communes of Greve, Radda, and Gaiole in Chianti. This wine is a result of around 70 micro-plots - sometimes only a single row of vines - all harvested and fermented individually. It is aged in for around 16 months in large French oak vats, only 10% new, followed by a year in bottle. A pure expression of Sangiovese, with bright red cherry notes, dried flowers, juniper and dried herbs. This is a vibrant, crunchy wine with firm, elegant tannins.

Vinification

Strict hand selection in vineyard. Further selection on sorting table after destemming followed by soft crushing into oak, cement and stainless steel vats. 3-4 days cold soak. Cooler fermentation with daily gentle pumpovers. Average 21days total time on skins.

Maturation

12 months in fine to extra fine-grained oak barriques (225L) and tonneaux (500L) of which 10% new.
