Bird in Hand Sparkling 2021
Description
The grapes sourced for the 2021 sparkling were selected from premium vineyards located in cooler wine regions across South Australia. Predominantly Pinot Noir, grape varieties and individual clones were chosen for their intense aromatics and elegant flavour profiles. Fresh strawberry and citrus blossom aromas with flavours of pure, fleshy red berry fruits, fine beading, refreshing acidity and well-integrated dosage.

Viticulture
Vines are vertically trained and trimmed across the growing season allowing dappled sunlight onto developing bunches. Grapes were harvested between 2nd February and 14th March.
Vinification
Grapes were crushed and destemmed straight to press with minimal time on skins and to avoid excessive phenolic pickup and to allow for light colour extraction. Free run juice was pressed to tank where it underwent a process of flotation to separate clear juice for fermentation.
