Description
2016 was an excellent vintage, producing a lovely rich wine with nuts and dried fig aromas giving way to a wonderfully luscious dessert wine with very ripe fruit. A sublime, traditional-style dessert wine made famous through prestigious Italian heritage, using grapes that are dried on straw mats under rafters. Mouth-filling, this Vin Santo has has characteristics of dried fruit, raisins and plums, and a velvety finish. Ideal with strongly flavoured cheeses and 'biscotti'. Long, slow and entirely Natural fermentation, this wine will keep for decades unopened. Best enjoyed at room temperature.

Vinification
The grapes are picked in October, once they reach maximum ripeness, and left to dry until February, when they are pressed to the small caratelli barrels in the Vinsantaia to undergo fermentation and then mature.
Maturation
Aged in Caratelli (small casks) for 45 months. The wine was kept in traditional 'Vinsantaia' (a special cellar) until bottling beginning of December 2020. No fining.
