Description
Pegasus Bay is a family affair; the Donaldsons have been making delicious wine in Waipara since 1970. Big and bold. Still lots of concentrated, honeyed fruit. Citrus especially limes, along with peaches, nectarines, lychees, pineapple and ginger spices There is a core of minerality and tangy acidity, which flows through the palate, helping to draw out the wine’s length and balance its off-dry finish.

Soil Type
The soil is free draining and of low fertility, resulting in naturally reduced vine vigour. This produces optimally ripened, high quality, flavourful grapes, which fully express the qualities of this unique setting.

Viticulture
An unusually large vineyard staff allows operations such as shoot thinning, crop thinning, bunch exposure and fruit selection to be carried out meticulously.
Vinification
After picking, the grapes were gently pressed and the juice allowed to settle overnight with only the clear portion being retained. This was fermented at low temperatures to help it keep its vibrant, natural fruitiness. It was handled very gently at all times to retain some zesty spritzig in the wine and hence aid its freshness and longevity.
