Naturally frozen Vidal grapes were hand harvested at -10˚C from Niagara Peninsula vineyards. The grapes were pressed frozen, releasing only one drop of pure extract from each grape. Barrel fermented (25%), and then aged in 100% French oak for 2 to 3 months.
