Description
Made from Len de l’Elh (or Loin de l’Oeil), native to south-west France, this wine will age well but is deliciously fruity in its youth. Maturation in acacia and oak adds complexity to the opulent fruit. Chill gently and pair with cheese or desserts. Cellaring potential : over 20 years

Vinification
The must ferments in French oak and acacia barrels for one or two months. In order to avoid using too much sulphur, fermentation is interrupted by cold stabilisation and filtering. The wine obtained conserves about 190g/l of residual sugar, balanced by a refreshing note of acidity.
Maturation
The must ferments in oak barrels for 1 - 2 months. Fermentation is interrupted using cold and filtration so as to avoid addition of sulphur. The resulting wine retains about 190g/l of residual sugar, balanced out by a refreshing note of acidity. Aged in oak and acacia barrels for 10 months. Bottled on August 30th 2018.
